I don't think that asking people to respect your boundaries is entitled. I think you have the right to set those boundaries.
Try some of the tactics in our recent video about getting people to switch, over the past few years I've had about a 90% success rate. It can be slow going, but don't give up!
I agree just recently I have a situation where knowing someone's willingness to avoid big tech tracking and all that good stuff but somehow didn't know how discord still collects your messages when it was clear enough (Collecting messages for public servers isn't concerning it's more DMs that it is) but they stubbornly refuse to use other means to either encrypt the communication or other platforms to the point I've taken an extreme measure that whenever the person wants to direct message me they have to choose to use SimpleX or Matrix. This is extreme but at this rate It is trying everything I can in the book to convince them (I could demonstrate it to them but they've felt annoyed enough and they are a derp kind of person so that would be hard so it's best they try to see how simple it is). I remember also trying to get my sister to use signal but because I didn't have the courage to show my attempts were failing (also she was giving excuses like storage when that would not be an issue) and my brother believes that privacy is futile when that's not true...
However I did have successful but also failed attempts also: Back in 2022 I had me and my best friend for who we chose to use signal. Later we would introduce stickers and it was a sick feature. After pitching it to another friend he was onboard with it and to this day we would use it and then another one. One of my other friend however would later ditch the app for unknown reason but honestly I feel comfortable enough that I have even good friends that want to stick with it even if it's for a silly feature. Just recently I had someone who would communicate with me through SimpleX over Matrix as Matrix's problem is more the fact of metadata issues so SimpleX solves it really nicely even if it's extreme I knew one way or another they would be onboard since they even tried it before and really liked it.
My non recent failure is with a fellow. Before graduation in college we exchanged communication with phone numbers and later I would introduce to him signal the same way and even offer a group with the same interests we have in hopes we can bond but after they would ghost me in communication It all fell apart and I'm no longer sure if they use the app and it's such a shame as it could have been great (they also left our group so therefore it ended in a failure).
Also my first ever interaction on signal (back when I used the app as an sms app too) was with a Student Psychiatrist on the same university where the college is who she was surveying people with autism like me which felt very great to have someone like her then.
And I am using the fact that the local group for the gacha Games we play would be exclusive to signal to make em feel like they'll need this platform if they want the stickers and the group.
Oh and finally yes my mom was onboard but just like you I do need to get her to use it more one way or another but it was sincerely appreciated.
It is great but in the end even as someone with non high threat model (so same) (which is why SimpleX is extreme but I really like how it works) it does get really annoying to get someone to switch but it is possible with every technique you can think in the book.
I mean the only reason my Matrix fellow accepted to use SimpleX to privately communicate is because I told them "Hey there I do prefer if you communicate with me on SimpleX as it's more private than Matrix metadata wise" and they get it though like with key exchange it first went through discord. And as for the others it's only a matter of patience and execution though for real life I really do need to think this through more than I do say online.

That's a great point about pitching it not as "switch" but instead "this is how you can reach me"
